Note for November’s missed update: This month was a lot better. It wasn’t perfect and my stats will show that but I did accomplish some things that were on my list! Goals are November & December.

Yes, another post using the same exact picture but this time I’m pleased with what I’ve done. I started the 4-Hour Body again… My goal is to do better so one day I can do it perfectly and eventually try the “meatless machine” mentioned in the book. So far I haven’t had one perfect week but you know what? As of this morning I’ve officially lost weight. I’ll go back slightly by saying I gained way more than I’d like to admit by emotionally eating, giving up and having a looooooooong pity party. However as previously stated I am not going for perfection instead progress, healthy changes and eventually a new lifestyle are my main goals. And to my surprise it is working!! I don’t find myself binge eating on cheat day like I used to. I enjoy cooking even on cheat day which I thought would never happen. I also don’t dive head first into a giant mound of cheese which used to be one of my favorite things to do on cheat day. Bonus I discovered I actually feel better when I eliminate or limit dairy.

  • Read something other than children’s books (Check)
    • The Adventures of Huckleberry Finn – finished
      • I’m counting this because it isn’t for his age group even though I started reading it for him
    • Told Under The Green Umbrella – finished
      • Doesn’t really count but I enjoyed it more than my son. I don’t think there were enough pictures to hold his attention
    • Treasure Island – finished
      • Not enough pictures to count for him so I’m counting this
  • Exercise 4x/ wk (Fail)
  • Post monthly updates on/after the 8th for accountability (?)
    • Missed November but this post is up so I guess Yes & No

All in all October – December were emotionally hard months. My son has been testing his boundaries. I haven’t been sleeping well. I really haven’t been liking who I am as a wife, mother (to human & animal) and April thus the long pity party. Despite these feelings I managed to make the changes needed to improve. No I don’t have dramatic pictures to show off like I’d hoped; what I do have is a better understanding of self and hope for the future. I have clear goals written down that I plan on displaying so when things get hard I can remind myself of what I need to focus on in order to improve.

And for those reading this if you are in a similar situation: It CAN and WILL get better we just have to take it one step at a time 🙂

Cooking with Pinterest – Chicken Nuggets & Fries

Each item took a few attempts but the best method was definitely following the recipe!

I used too much spice the first time (nuggets) thinking it would be okay because my son loves spicy but it proved to be too much. So this time around I am used a lot less and I didn’t use any for the fries.

I forgot to take pictures of the nuggets…

I based the coating for the fries off of the chicken nugget recipe.

All in all I definitely plan on using this recipe again 🙂

Ikea Date

Not all dates are created equal but ALL dates can be fun! We relaxed, ate, measured the bathroom then went to Ikea. I like to call this a working date because we gathered a lot of ideas and created a plan for updating/ remodeling our house.

All in all these are just ideas and inspiration which I am sure will change as we get to the research/development phase. But this was a lovely date with my man. It helped me get back to being a wife and not just mom all the time. It also reminded me why I chose this man and why he chose me. He’s amazing and the perfect balance to my brand of crazy 😉

I don’t really have a good reason for this video as we have no plans of buying the light but we both love playing with it!

Random Visual Escape

I’ve been wrapped up in my feelings lately. From my own self-image to my titles (mom, wife, etc) to the state of the world. I feel caught up and unable to express myself so I choose to make a blog post of all the beautiful things I’ve seen recently. This is my random visual escape.

I am choosing to see beauty rather than drowning in sorrow.

I hope this post can be a relaxing retreat in this hectic world 🙂

  1. We dressed casual since we only had a few hours until we had to pick up the mini and we forgot to grab a penny
  2. We grabbed a penny & let the internet randomly generate a number (18 turns)
  3. Wrote this on my arm so I didn’t have to keep opening Pinterest
  4. We alerted this since we kept going in circle
  5. We did then we restarted on foot!!

Likes

  • Fun & interesting
  • Cheap as long as you have gas
  • Restarting on foot was great exercise and added a bit of intrigue as we’d never walked the area before

Dislikes

  • Can be annoying when you keep going in circles
    • this is why we altered it a bit
  • Better if you start in an area you aren’t familiar with
  • You should eat first to avoid being hangry… See last picture for our hangry fix:)

      • Side note: Adventure, Sci-Fi and mystery are my favs
    • Bonus points because I was able to read it to my son

Cooking with YouTube – Pupusas

Hubby was having a rough week and I had leftover shredded BBQ beef so I figured I’d surprise him with a tasty meal that had yummy childhood memories attached to it. I’ve done this before when a friend’s mom showed me years ago but they didn’t turn out very flavorful when I tried to cook them on my own. Fast forward a few years, loving motivation and a few YouTube videos and voila flavorful hubby approved pupusas!

I didn’t take step by step pictures because well I forgot… But here they are 🙂 Yes, my photography skills need work but I’ll improve.

Ingredients:

  • homemade shredded BBQ beef
    • funny story it was supposed to be pulled pork but I grabbed the wrong meat because I was rushing to get out of Costco. I didn’t realize my error until it was time to put it in the crockpot
  • mozzarella cheese
  • outside/ shell: Maseca Instant Corn Masa Flour, chicken broth (water can be used but mine taste better using broth) & cayenne

About My Weight/Wait

Yes, this is the 1st “before” picture I posted but I look the same so I figured why not be lazy and use this 😉

You read that correctly. I waited to write about my weight because I kept hoping I’d have amazing before and after photos. I’m still over the weight I want to be, look like my “before” picture(s) and haven’t seriously stuck to anything. I tired the 4 Hour Body, intermittent fasting and counting calories but I always allowed myself to make excuses; motherhood was my go to excuse (avoids eye contact with fit moms). I don’t have it figured out and I will keep trying things until I find something I like but until I find my happy healthy plan here are my stats and what I hope to achieve.

March Update

Well things went south… Details would be boring so here are the highlights 🙂

Life Changes

  • Weight: 230.2lbs
    • it is 6:38pm PST and I’ve been drinking lots of water but it’s still bad…
  • Health/ Fitness: exercised 4 out of 10 days (3/26 – 4/4)
    • big accomplishment considering I haven’t been this consistent in years!
  • Note: I was going to write “before pics” as the caption but I already started the journey so these were rightfully captioned “IP (in progress) pics”

Self Care & Balance

Life happened and I wasn’t being balanced. I haven’t been on the diet in weeks, was eating everything in sight (thanks Pinterest not so healthy food pins) and my weight showed it. As of Sunday March 26th, 2017, I stayed awake (son still wakes 2+ times per night), drank coffee possibly ate breakfast then prepared to walk. I didn’t let my son getting back up stop me. I dressed him in his track suit and strapped him into his stroller and off we went. This started a chain reaction which included exercising intentionally, weekly pampering, drinking more water  and eating meals with more attention to health. For now life seems to be all over the place but those are little things I can do no matter what.

What I learned:

  • Don’t forget about yourself
  • Don’t sweat the small stuff
  • Appreciate the present even if it isn’t ideal
  • As long as you’re alive you can change things but it is up to you if it changes for good or for bad

Cooking with Pinterest

Cooking with Pinterest; mostly diet friendly addition!

I love this recipe because it was simple and I had all the ingredients! The downside is while the nuts, EVOO and spices were diet friendly the amount of nuts I used was not. So I unfortunately won’t be repeating this meal.


This recipe is tasty and a great way to incorporate more veggies. I used the original spaghetti squash recipe from Pinterest and added bell peppers and spicy sausage to it (no sauce). Another win but this one will make it back into the rotation.

This has been one of my favorites! It includes cabbage, ground turkey, black beans and 1/2 tbsp of Costco salsa plus Cholula. It is fast, easy and can be prepared ahead of time.

I wanted to switch up our cheat days by only eating out for one meal and buying snacks. Below are my reasons for doing so:

  • Save money
  • Stay in cooking mode making it easier to return to cooking all our meals
  • Slightly healthier than eating out all day
  • Allows me to try new things that we can’t eat during the week

This was the end of our first 4 weeks. I specify weeks because I’m counting my month as the 12th however we’ve technically already finished a 4 week period. Anyways I will be trying to work out a publishing schedule that allows me to post one food, life change, married life and parent life update per month. I’m not sure how this schedule should go or if it’ll be in the same order every month but this is my writing goal. I want to hold myself accountable for getting out and doing something with my family while getting fit and cooking. This blog will be the place I do that. I hope you join me on my ever changing journey to the best mommy I can be 🙂
